Johnnie Cake

My grandma lived in Bahamas for over a decade and this delicious recipe is one of the things she brought back to Jamaica. I like to think of it as a cross between a cornless cornbread (ha) and a biscuit.

 In Granny added her own style to it by adding codfish and bell peppers which takes the flavor to a whole new level.  Of course, you can make the recipe and omit the codfish and peppers for a more boring Johnnie Cake (but why would you?) which pairs well with simple butter and jam.

 1.50 cups Flour
 0.50 cup Salted codfish
 0.25 cup Chopped red or yellow bell peppers
 0.25 cup Diced onions
 1 Egg
 1 tbsp Softened butter
 1 tbsp Olive oil or any cooking oil
 1 pinch Salt

Cover codfish with water and allow to soak for 30 minutes before use.

Preheat oven to 375 degrees and grease a baking pan or dish with butter.

Mix all ingredients together until just blended. Do not overmix.

Pour mixture into greased baking pan or dish.

Pour olive oil on top and swirl into mixture with a fork. This prevents the top crust from cracking too much during baking.

Bake mixture for approximately 35-40 minutes or until an inserted knife comes out clean.
