Without fail, we have curry chicken once a week. It's such an easy dinner to pull together - the curry powder does most of the work and imparts such rich flavor. You can pair this saucy dish with plain white rice. Roti or naan bread are also excellent options - anything really to soak up the delicious sauce.

3lbsChicken thighs, chopped into bitesize pieces
6tbspJamaican Curry Powder (see recommendations below)
3garlic gloves, minced
1Onion
2Fresh Thyme Sprigs (or 1.5 tsp of Dried Thyme leaves)
2Medium Sized Potatoes
3tbspCooking Oil
1tspSalt
1tbspBlack Pepper
1.50cupsWater
⅓cupbell pepper, chopped
0.25green onion, chopped

After washing and drying chicken, season with curry powder, onion, garlic, black pepper and salt. Rub into chicken well. For even better flavor, allow seasoned chicken to marinade overnight in the refrigerator.

To cook, heat cooking oil in a saucepan. Add chicken and cook until it starts to brown. As my grandma would say, you want the chicken to have some color before adding water.

Once chicken is nicely browned, add water and potatoes. Once the pot comes to a boil, reduce heat to low-medium and allow to cook until the sauce thickens.

Taste the sauce and add additional salt and black pepper as needed.
